Nest Pie

Happy Monday and Total Eclipse Day, friends! What a whirlwind of a weekend it has been for me. How was it for you? I hope everyone has enjoyed the excitement of the Total Eclipse in all the various ways one could be enjoying it. What a totally out of this world experience for us in our lifetimes! Speaking of out of this world: Today's recipe reveal is my very own Nest Pie. The nest pie is one of my most popular pies (it won the Duncan Hines festival Best Dessert 2015!) It has a coconut macaroon crust and a fudge brownie filling. {making it gluten free!} 

CRUST ingredients:

4 cups sweetened snowflake coconut

1/2 cup sugar

* Tossed together in a bowl

1/2 cup egg whites

1 tsp vanilla extract

* Mix together with your hands (it's sticky, but the best way!)

Use 1/3 of the mixture to press in 6 greased mini tart pans 

(my oldest son Brady helped press them in for me)

Prebake til brown in a 325 degree oven

FILLING ingredients:

1 stick unsalted butter

1 cup chocolate chips

* Melt together in microwave

1/2 cup of brown sugar

1/2 cup sugar

* Add to the melted chocolate

2 eggs

1 tsp vanilla

* Stir in til combined

  1. ​Scoop into the mini pans.

  2. Bake until the filling is just beginning to set. (About 10min)

  3. Then add the remaining crust to the edges and bake till the filling is puffed and the crust is browned.
