Happy Wednesday, friends! You know what that means here on the blog; its Recipe Release day! Today we're stepping outside of the pie zone and covering a VERY important food group: cookies.
(Gluten-free) PB Cookies, to be exact! I love these cookies because they are creamy and delicious. To me, it's almost as if by removing the flour you allow the peanut butter to really stand out. Don't take my word for it, though. Try and see what you think!
GETTING STARTED: This recipe yields 24 cookies (using small scoop)
AGAIN, FOR GOOD MEASURE: See what I did there?
1/4 cup egg whites
1/4 tsp. salt
2 cups peanut butter
2/3 cups sugar
1/4 cup brown sugar
This week's recipe called for the newest episode of my YouTube channel! Take a peek below to follow along, as well as noting the step by step instructions listed beneath it.
1. Whisk egg whites + salt together until foamy.
2. Add sugar, brown sugar, peanut butter, and combine.
3. CHILL FOR AT LEAST AN HOUR IN FRIDGE. I prefer chilling overnight, though I know it's hard to wait!
4. Roll out dough balls and criss-cross with a fork on top. This is a fun job for the kiddos!
*Queen's Tip: If it's sticking to the dough, spray fork with non-stick spray.
5. Bake at 350 degrees for 7 minutes (the edges should be set and lightly brown).
Pie Queen Fun Fact: I like to eat mine with chocolate milk!
There you have it! Your weekly sweet tooth fix. Thank you for sharing the secrets of my kitchen, and for allowing me to come into yours. I look forward to Recipe Day every week on the blog! Here's to hoping you make a batch of these yummies with (or for) someone you LOVE. For the Pie Queen, that's what makes it ALL worth it!
Don't forget to tag me in your finished products, please!
Join me bright and early on Friday morning for a cup of coffee, a glimpse into next week, and a new feature in the Spotted Series. It's always better when you're here! Have a great rest of the week, I'll see you then. Happy Baking!
